  • Vineyard & Winemaking Notes

    Candoni Prosecco Rosè is made from a selection of the Estate’s finest grapes and vineyards, with the best vocation and exposure to the sun. Limited production helps to achieve optimum ripeness and the right concentration give the finished product elegance and structure.

    The finest Glera grapes selected in the vineyard are soft pressed with a low pressing yield. Fermentation at a controlled temperature of 60.8 F lasts for 10-12 days, followed by ageing on the fine lees for about two months.

    The Pinot Noir Grapes are macerated for the extraction of the color.

    Once fermentation is complete, the blend is composed (85% Glera- 15% Pinot Noir).

    The blended wine then begins second fermentation in autoclave with the Charmat method that takes place at a controlled temperature of 60.8 F° for about 12-14 days during which the very fine perlage forms. The wine then rests on the lees for a further 70-80 days (in other prosecco companies, this process lasts an average of 45-50 days) to achieve a unique softness and add creaminess to the bubbles, making them fine, pleasant and elegant. This gives the wine structure and complexity. The product is then stabilized, filtered and prepared for isobaric bottling using the best technology available to preserve the quality of the finished product and avoid oxygen dissolution to preserve the aromas to the full.

    Pairs well with Italian appetizers, prosciutto, stuffed mushrooms, creamy sauces, almonds, seafood, fried foods, spicy foods, and even potato chips or buttered popcorn. It is truly an ideal accompaniment to virtually any meal.

  • How to Serve

    In order to appreciate this wine at its best, the bottle should be taken out of the cellar and immersed for about half an hour in an ice-bucket. The ideal temperature to drink this wine is 42.8° F – 46.4° F. The bottle should be carefully opened by hand. To open remove the foil, then twist and remove the wire. Point the bottle neck away from your body then slowly remove the cork twisting by hand and making sure the wine does not spill when opened! The best glasses to use are clear, transparent crystal flutes.

  • Conservation

    Candoni Prosecco should not be aged and is best consumed young. The bottles should be stored horizontally in a cool, dark, damp cellar.
